3/4 Cup Applesauce
1 Cup Earth Balance (butter like stuff); softened
3/4 Granulated sugar (organic)
3/4 Firmly packed light or dark brown sugar
2 tsp Vanilla
2 1/4 Cups All Purpose flour
1 tsp baking soda
1 tsp salt
1 – 2 Cups non diary semi sweet chocolate chips
1 cup chopped nuts (optional)
Preheat oven to 375.
In large bowl cream butter, sugars, and vanilla until well mixed. In seperate bowl combine flour, baking soda, and salt. Gradually add the dry mixture to the wet, mixing after each addition. When almost thoroughly combined, add chocolate and nuts. Mix them in.
Bake on cookie sheet 8 – 10 min, or until golden brown. Let stand for 2 min, then move to wire rack to cool.
Yield: 1 dozen cookies
*Some brands of “semisweet chocolate chips” add cow’s milk. By definition, that’s not semisweet! Make sure to read the label.
